Ingredients

Instructions
- In a bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg with the milk, melted butter, and vanilla if using.
- Add the wet ingredients to the dry ingredients and mix with a spatula without overmixing.
- Heat a non-stick frying pan over medium heat and grease it with a little butter.
- Pour approximately 1/4 cup of batter for each pancake.
- Cook until bubbles appear on the surface and the edges look firm. Turn over and cook until golden brown.
- Serve them hot with your preferred accompaniments.

- Do not overmix the batter to maintain fluffiness.

- You can cover the pan to make taller pancakes.
