Preparation
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the eggs with a pinch of salt, sugar, and vanilla. Stir well until the mixture is smooth and slightly frothy.
- Add the milk and sunflower oil to the egg mixture, continuing to mix until combined.
- Sift together the flour and baking powder, then gradually add it to the wet ingredients. Mix until smooth and no lumps remain.
- Pour half of the batter into a greased cake pan, spreading it evenly to create a smooth top.
- In another bowl, mix the fresh cheese with the sugar and one egg until well combined and creamy.
- Carefully pour the cheese mixture over the batter in the pan, spreading it gently.
- Distribute the frozen berries evenly on top of the cheese layer.
Baking
- Bake in the oven for about 35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow it to cool slightly before dusting with icing sugar.
Notes
Make sure your ingredients are at room temperature for a smoother batter. Don’t skip the cooling time; the cake will slice better when slightly cooled. Try swapping the berries with chopped fruits or nuts for different flavors.
