Rinse the dates, raisins, cranberries, and apricots under cold water.

Cover the rinsed fruits with cold water and soak for 15–20 minutes.

After soaking, drain the fruits thoroughly and pat them dry to remove excess moisture.

Lightly toast the almonds and sesame seeds in a dry pan until they are fragrant. Let them cool.
Mixing

In a blender, grind the soaked dates until smooth.

Add the remaining dried fruits and blend into a thick paste.

Transfer the mixture to a bowl.

Mix in the pumpkin seeds, chopped walnuts, toasted almonds, sesame seeds, and oatmeal until everything is evenly combined.
Shaping

Shape the mixture tightly into a compact sausage log.

Roll the log in the reserved sesame seeds to coat it.

Wrap the log firmly in parchment or plastic wrap.
Freezing

Freeze for 2 hours before slicing.
Notes
Keep the energy dessert in an airtight container in the fridge for up to a week. You can also freeze individual slices for longer storage. For a chewier texture, reduce the soaking time for the dried fruits. Add a pinch of cinnamon or a splash of vanilla extract for extra flavor. Substitute any dried fruit or nuts based on your preference.
