Ingredients

  • 1 lb 450g Italian sausage (mild or spicy)
  • 1 tbsp olive oil if sausage is lean
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 cups 720 ml chicken broth
  • 1 cup 240 ml heavy cream
  • 2 medium potatoes peeled and diced small
  • or 1 cup cauliflower for low-carb option
  • 1 cup chopped kale or spinach
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes optional
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  • Brown the Sausage
  • Heat a large pot over medium heat.
  • Add sausage and cook until browned, breaking it apart with a spoon (about 5–7 minutes).
  • Drain excess grease if needed.
  • Add Aromatics
  • Add onion and cook 3–4 minutes until soft.
  • Stir in garlic and cook 30 seconds until fragrant.
  • Simmer the Soup
  • Pour in chicken broth.
  • Add diced potatoes, oregano, basil, red pepper flakes, salt, and pepper.
  • Bring to a gentle boil, then reduce heat and simmer 12–15 minutes until potatoes are tender.
