Ingredients

  • 4 English muffins or sandwich buns
  • 8 breakfast sausage patties about 2 per sandwich
  • 4 large eggs
  • 4 slices cheddar cheese or American cheese
  • 2 tbsp butter
  • Salt & pepper to taste
  • Optional: 1 tbsp milk for fluffier eggs

Instructions

Cook the sausage

  • Heat a skillet over medium heat.
  • Add the sausage patties and cook 3–4 minutes per side, until browned and cooked through.
  • Remove from skillet and set aside.

Toast the buns

  • Split the English muffins and toast them in the same skillet for 1–2 minutes until golden.
  • Remove and set aside.

Cook the eggs

  • Melt 1 tbsp butter in the skillet.
  • Crack the eggs into the skillet and scramble (or cook sunny-side up if you prefer).
  • Season with salt and pepper.
  • If using milk, whisk it with eggs before cooking for extra fluffiness.
  • Cook until the eggs are set, about 2–3 minutes.

Assemble the sandwiches

  • Place sausage patties on the bottom half of each muffin.
  • Add the egg on top of sausage.
  • Place cheese slice over the egg.
  • Cover with the top muffin.

Optional melt

  • If you want extra melty cheese, place assembled sandwiches back in the skillet for 30–60 seconds with the lid on.
