Chicken Breast Stuffed with Spinach and Cheese

A delicious and nutritious recipe that combines juicy chicken breast with a creamy spinach and cheese filling. Perfect for special lunches or quick dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 200 g fresh or frozen spinach
  • 2 cloves of chopped garlic
  • 1 tablespoon of olive oil
  • 150g of cream cheese
  • 1/2 cup of grated cheese
  • 1/4 teaspoon of nutmeg (optional)
  • Salt and pepper to taste
  • 1 egg (optional)
  • 1/2 cup breadcrumbs (optional)
  • Oil or butter for browning

 


Instructions

  1. Sauté the garlic in oil and add the spinach until it reduces.
  2. Mix with the cheeses, salt, pepper, and nutmeg.
  3. Make a cut in each breast to form a pocket.
  4. Fill with the spinach and cheese mixture and close with toothpicks.
  5. (Optional) Dip them in beaten egg and breadcrumbs to coat them.
  6. Brown the chicken breasts in a pan for 6-7 minutes on each side or finish in the oven.
  7. Serve hot with salad, rice or mashed potatoes.

Notes

  • You can use ricotta, mozzarella or vegan cheese.
  • Add a few drops of lemon juice to the filling for a tangy touch.
  • Use toothpicks to prevent the filling from spilling out.
