A tender, juicy, and aromatic beef stew, perfect for family meals or cold days. It’s slow-cooked with spices, red wine, and tomatoes for a deep, comforting flavor.
Ingredients
- 2Â tablespoons of olive oil
- 1Â large chopped onion
- 4Â cloves of chopped garlic
- 900g of diced beef
- 450g of pearl onions or shallots
- 2Â tablespoons of tomato paste
- 400g of crushed tomatoes
- 1/2Â cup of red wine vinegar
- 1/2Â teaspoon of ground cinnamon
- 1Â teaspoon of dried oregano
- 1/2Â teaspoon of allspice
- 1Â bay leaf
- 2Â cups of beef broth
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the meat in hot oil until well sealed. Remove and set aside.
- Sauté the onion and pearl onions until softened. Add the garlic and cook for one more minute.
- Add the tomato paste, crushed tomatoes, vinegar, and spices. Mix well.
- Add the meat back in, add the broth, and season. Cook in a pressure cooker for 35 minutes.
- Let the pressure release naturally for 10 minutes. Open, adjust seasoning, remove bay leaf, and serve hot with parsley.
