Ingredients

Dry Ingredients
  • 1.5 tablespoons pumpkin seeds (around 15g)
  • 1.5 tablespoons sunflower seeds (around 15g)
  • 3.5 tablespoons walnuts (around 30g)
  • 1.5 tablespoons cashew nuts (around 15g)
  • 4 ounces dates (about 115g) Remove pits before chopping.
  • 1.7 ounces dried apricots (around 50g)
  • 1.5 tablespoons plums (around 20g)
  • 1 piece lemon (zest of)
  • 1 teaspoon ginger (grated)
  • 1.5 tablespoons sesame seeds (around 15g)
  • 1.2 ounces dark chocolate (sugar-free, around 35g) Grate or finely chop.

Method

Preparation
  1. In a frying pan, lightly fry the pumpkin seeds and sunflower seeds until golden brown, then set aside to cool.
  2. Toast the walnuts until slightly browned, remove from heat and let cool.
  3. Soak the dates, dried apricots, and plums in water for 15 minutes.
  4. Once cooled, chop the walnuts and cashew nuts finely.
  5. Remove pits from the dates and chop them.
  6. In a mixing bowl, combine the chopped dates, soaked dried fruits, lemon zest, ginger, and sesame seeds.
  7. Grate or finely chop the dark chocolate and add it to the mixture. Mix well until everything is combined.
  8. Lightly grease your hands with a little oil and shape the mixture into small balls.
  9. Place the balls on a tray lined with parchment paper and refrigerate for at least 2 hours.
