Mediterranean Shrimp in Tomato & Garlic Sauce
(Italian–Greek coastal style)
Ingredients
700 g (1½ lb) large shrimp, shell-on or peeled
4 tbsp extra-virgin olive oil
4 cloves garlic, finely chopped
1 small onion or shallot, finely chopped
1 cup crushed tomatoes or tomato passata
2 tbsp tomato paste
½ tsp paprika
½ tsp chili flakes (optional)
Salt and freshly ground black pepper
½ cup water or dry white wine
Fresh parsley or basil, chopped
Instructions
1. Sauté aromatics
Heat olive oil in a wide pan over medium heat.
Add onion and sauté until soft.
Add garlic and cook 30 seconds (do not brown).
2. Build the sauce
Stir in tomato paste and paprika.
Add crushed tomatoes, water (or wine), salt, pepper, and chili flakes.
Simmer gently 10 minutes until thick and glossy.
3. Cook the shrimp
Add shrimp to the sauce in a single layer.
Cook 2–3 minutes per side, turning once, until pink and just cooked.
Do not overcook.
4. Finish
Sprinkle generously with fresh parsley or basil
Drizzle lightly with olive oil
