Mediterranean Olive Oil–Seared Beef Steaks
(Italian–Greek style)
Ingredients
4 thick beef steaks (filet mignon, sirloin, or ribeye)
3 tbsp extra-virgin olive oil
2 cloves garlic, lightly crushed
1 tsp dried oregano or thyme
Salt (preferably sea salt)
Freshly ground black pepper
Optional: fresh rosemary sprigs
Instructions
1. Prepare the steaks
Remove steaks from the refrigerator 30 minutes before cooking.
Pat dry thoroughly.
Season generously with salt and black pepper on both sides.
2. Sear
Preheat oven to 200°C / 400°F.
Heat a heavy skillet or oven-safe pan over high heat.
Add olive oil and garlic.
When oil is shimmering, add steaks.
Sear 2–3 minutes per side until a deep brown crust forms.
3. Finish in the oven
Sprinkle steaks with oregano (and rosemary if using).
Transfer pan to oven.
Cook 5–8 minutes depending on thickness and doneness:
Medium-rare: 52–54°C / 125–130°F internal
4. Rest
Remove steaks and rest 5 minutes before serving.
Optional Mediterranean finish
Drizzle with fresh olive oil
Squeeze of lemon or splash of balsamic
Sprinkle chopped parsley or rosemary
