Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

For the Creamy Cheesecake Layer

  • 8 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup whipped topping

For the Cherry Layer

  • 1 can cherry pie filling, about 21 oz
  • 1 tbsp lemon juice, optional

For the Topping

  • 1 1/2 cups whipped topping or whipped cream
  • 1/2 cup graham cracker crumbs
  • Fresh or maraschino cherries, for garnish

Instructions

  1. Lightly grease an 8×8-inch square dish or use a similar-size glass serving dish.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
  3. Stir until all the crumbs are evenly coated and resemble wet sand.
  4. Reserve about 1/2 cup of the crumb mixture for the topping.
  5. Press the remaining crumbs firmly and evenly into the bottom of the dish.
  6. Place the crust in the refrigerator while preparing the filling.
  7. Add the softened cream cheese to a large mixing bowl.
  8. Beat with an electric mixer for about 1–2 minutes until completely smooth and creamy.
  9. Add the powdered sugar and vanilla extract.
  10. Beat again until light, fluffy, and well combined.
  11. In a separate bowl, beat the heavy whipping cream until stiff peaks form.
  12. Gently fold the whipped cream into the cream cheese mixture.
  13. Fold in the whipped topping until the cheesecake layer becomes light and fluffy.
  14. Spread approximately half of the cream cheese mixture over the chilled graham cracker crust.
  15. Smooth the top with a spatula.
  16. In a small bowl, stir the cherry pie filling with lemon juice if using.
  17. Spoon the cherry filling evenly over the cheesecake layer.
  18. Carefully spread the remaining cream cheese mixture over the cherries.
  19. Top the dessert with whipped topping or freshly whipped cream.
  20. Sprinkle the reserved graham cracker crumbs generously over the top.
  21. Decorate the center with several cherries for the classic presentation shown.
  22. Cover the dish and refrigerate for at least 2 hours. For the best texture, chill for 4 hours or overnight.
  23. Serve cold, scooping or slicing portions directly from the dish.

Tips

Make sure the cream cheese is fully softened before mixing. Cold cream cheese can leave small lumps in the filling.

For a firmer dessert that slices more neatly, chill it overnight.
