5-Minute Cottage Cheese Banana Bread Mug Cake
Ingredients
1/2 ripe banana, mashed
1/4 cup cottage cheese
1 large egg
2 tablespoons oat flour or almond flour
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 teaspoon honey or maple syrup (optional)
Pinch of salt (optional)
Optional: chopped walnuts or chocolate chips
Instructions
1. Mash the banana in a microwave-safe mug.
2. Whisk in the cottage cheese, egg, and honey if using.
3. Add oat flour, baking powder, cinnamon, and salt.
4. Mix until smooth and fold in optional mix-ins.
5. Microwave for 90–120 seconds until set.
6. Cool for one minute and enjoy warm.
Notes
Blend the cottage cheese for an extra smooth texture.
