
Amazing Vanilla Celebration Cake: 2-Layer Bakery-Style Birthday Perfection
Ingredients
Vanilla cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
1 cup whole milk
1/2 cup sour cream
Buttercream frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2–3 tablespoons heavy cream
2 teaspoons vanilla extract
Decoration:
Rainbow sprinkles
Instructions

2. Preheat oven to 350°F (175°C)
3. Grease and line two 8-inch cake pans with parchment paper
4. In a bowl whisk flour, baking powder, and salt
5. In a large bowl cream butter and sugar until light and fluffy
6. Add eggs one at a time mixing well after each addition
7. Mix in vanilla extract
8. In another bowl combine milk and sour cream
9. Alternate adding dry ingredients and milk mixture into batter
10. Mix until smooth but do not overmix
11. Divide batter evenly between cake pans
12. Bake for 28–32 minutes until golden and toothpick comes out clean
13. Allow cakes to cool completely

16. Beat butter until creamy
17. Gradually add powdered sugar
18. Mix in vanilla extract and heavy cream until fluffy

20. Assemble cake layers with frosting between each layer
21. Frost outside of cake and decorate with rainbow sprinkles

Notes
Use room temperature ingredients for smooth batter
Do not overmix to keep cake soft and fluffy
Cool cake completely before frosting
Store covered at room temperature up to 2 days or refrigerate longer
