Citrus Honey Cornmeal Cake – Moist, Sunny & Drizzled with Sweet Citrus Glaze
Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup softened butter
1 cup milk
3 large eggs
Zest of 1 orange
Zest of 1 lemon
1/4 cup orange juice
1/4 cup lemon juice
1/4 cup honey
1 teaspoon vanilla extract
Glaze:
1 cup powdered sugar
2 tablespoons orange juice
1 tablespoon lemon juice
1 tablespoon honey
1 teaspoon orange zest
1 teaspoon lemon zest
Instructions
1. Preheat oven to 350°F (175°C) and prepare a 9-inch cake pan.
2. Whisk together the cornmeal, flour, baking powder, and salt.
3. Cream the butter and sugar, then beat in the eggs, honey, vanilla, and citrus zest.
4. Alternate adding the dry ingredients with the milk, then stir in the citrus juices.
5. Pour into the pan and bake for 35–40 minutes.
6. Whisk together the glaze ingredients and drizzle over the cooled cake.
7. Garnish with citrus slices and serve.
Notes
Use fresh citrus for the brightest flavor.
Allow the cake to cool before glazing.
Store covered for up to one week.
