Ingredients

1 cup plain unsweetened Greek yogurt
4 large eggs
1 cup almond flour
¼ cup coconut flour
1½ tsp baking powder
¼ tsp salt
½ tsp xanthan gum (optional)
1 tbsp olive oil or melted butter
½ tsp garlic powder or herbs (optional)


Instructions

Preheat oven to 350°F (175°C). Grease loaf pan.
Whisk yogurt and eggs until smooth.
Add flours, baking powder, salt, xanthan gum.
Stir in oil and herbs.
Scoop batter into pan and smooth top.
Bake 35–40 mins. Cool completely before slicing.

Notes

Use full-fat yogurt for best texture.
Cool completely before slicing.
Freeze leftovers for up to 3 months.
