
Mini Apple, Carrot & Cinnamon Muffins
Ingredients
1 medium apple, grated
1 medium carrot, grated
2 large eggs
½ cup ground oats or rolled oats
½ cup plain unsweetened yogurt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract (optional)
1 teaspoon baking powder
Sweetener to taste (optional)
Optional:
2 tablespoons raisins
2 tablespoons chopped walnuts
Instructions
1. Preheat oven to 350°F and prepare a mini muffin pan.
2. Whisk together eggs, yogurt, and vanilla.
3. Stir in grated apple and carrot.
4. Mix in oats, cinnamon, baking powder, and optional sweetener.
5. Fold until combined.
6. Divide batter evenly into muffin cups.
7. Bake for 18–22 minutes until lightly golden.
8. Cool before serving.
Notes
Use sweet apples for the best natural flavor.
Store refrigerated for up to 5 days.
Freeze for up to 3 months.
