Pistachio Tea Loaf
Ingredients
2 cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup whole milk
1 cup chopped pistachios
¼ teaspoon almond extract (optional)
Instructions
1. Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
2. Whisk together flour, baking powder, and salt.
3. Cream butter and sugar until fluffy.
4. Beat in eggs one at a time, followed by vanilla and almond extract.
5. Alternate adding dry ingredients and milk until just combined.
6. Fold in chopped pistachios.
7. Transfer batter to the loaf pan and sprinkle with extra pistachios.
8. Bake for 50–60 minutes until golden and cooked through.
9. Cool completely before slicing.
Notes
Toast pistachios for extra flavor.
Do not overmix the batter.
Store covered for up to 3 days or freeze for up to 3 months.
