Ingredients

2 cups grated carrots

1 cup cottage cheese

1/2 cup rolled oats

1/2 cup brown sugar

1/4 cup honey

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.

2. Whisk together cottage cheese, eggs, honey, brown sugar, and vanilla.

3. Mix in oats, baking powder, baking soda, cinnamon, and nutmeg.

4. Fold in grated carrots and optional walnuts or raisins.

5. Spread evenly into the prepared baking dish.

6. Bake for 35–40 minutes until set and lightly golden.

7. Cool for 10 minutes before slicing and serving.

Notes

Blend the cottage cheese for a smoother texture if desired.

Add walnuts or raisins for extra flavor and texture.

Store refrigerated for up to 5 days or freeze individual portions.
