Flourless & Sugar-Free Oatmeal, Apple & Carrot Cake – A Healthy, Naturally Sweet Treat
Ingredients
2 medium apples, grated
2 medium carrots, grated
2 large eggs
1 cup rolled oats (or oat flour)
1/4 cup raisins or chopped dates (optional)
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla extract
2 tablespoons melted coconut oil
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and prepare an 8-inch cake pan.
2. Grate the apples and carrots.
3. Whisk together eggs, vanilla, and coconut oil.
4. Mix in the apples, carrots, oats, cinnamon, baking powder, salt, and optional raisins.
5. Let the batter rest for 5 minutes.
6. Bake for 35–40 minutes until golden and cooked through.
7. Cool before slicing and serve plain or with yogurt.
Notes
Use certified gluten-free oats if needed.
Add chopped walnuts for extra crunch.
Store refrigerated for up to 5 days.
