Coffee Banana Bread
Ingredients
3 ripe bananas, mashed
1/3 cup melted coconut oil
1/2 cup brown sugar
1/4 cup brewed strong coffee
1 teaspoon vanilla extract
1 tablespoon apple cider vinegar
1/4 cup plant milk
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon (optional)
Instructions
1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
2. Whisk together bananas, coconut oil, brown sugar, coffee, vanilla, vinegar, and plant milk.
3. Add flour, baking soda, baking powder, salt, and cinnamon.
4. Mix until just combined and fold in optional chocolate chips or walnuts.
5. Transfer batter to the loaf pan.
6. Bake for 50 to 60 minutes until a toothpick comes out clean.
7. Cool completely before slicing.
Notes
Use overripe bananas for maximum sweetness.
Allow coffee to cool before mixing.
Freeze individual slices for quick breakfasts.
