
Easy Walnut Cake – Soft, Moist & Perfect for Any Occasion
Ingredients
100 g walnuts
100 g oat flour, oat bran, or preferred flour
1 teaspoon baking powder
2 large eggs
100 g brown sugar or granulated sugar (or liquid stevia)
Optional: dulce de leche and chopped walnuts for topping
Instructions
1. Preheat oven to 350°F (175°C) and prepare an 8-inch cake pan.
2. Pulse the walnuts in a food processor until finely ground.
3. Mix the ground walnuts, oat flour, and baking powder.
4. Add the eggs and sugar, stirring until smooth.
5. Pour the batter into the prepared pan.
6. Bake for 25–30 minutes until a toothpick comes out clean.
7. Cool completely and top with dulce de leche and chopped walnuts if desired.
Notes
Toast the walnuts before grinding for richer flavor.
Allow the cake to cool before adding toppings.
Store in an airtight container for maximum freshness.
