Ingredients

2 cups grated carrots

3 large eggs

1/2 cup melted coconut oil

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups almond flour

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1 teaspoon baking powder

1/4 teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. Whisk together the eggs, coconut oil, honey, and vanilla.

3. Fold in the grated carrots.

4. Add the almond flour, ginger, cinnamon, baking powder, and salt.

5. Mix until combined and spread evenly into the prepared pan.

6. Bake for 28–35 minutes until the center is set.

7. Cool completely before slicing into 10 bars.

Notes

Use finely grated carrots for the best texture.

Don’t overbake.

Store refrigerated for up to one week or freeze for three months.
