Ingredients

Base Ingredients
  • 120 g 120 g (1 ½ cups) oat flakes Choose rolled oats for the best texture; steel-cut won’t work as well.
  • 200 ml 200 ml (¾ cup) hot milk
  • 2 2 large eggs Using room temperature eggs can lead to better mixing and a lighter texture.
  • 2 2 ripe bananas, mashed Overripe bananas are ideal as they lend natural sweetness and moisture.
  • 1 teaspoon 1 teaspoon vanillin (or vanilla extract)
  • 40 g 40 g (½ cup) unsweetened cocoa powder Bitter cocoa enhances the chocolate flavor without adding too much sweetness.
  • 1 teaspoon 1 teaspoon baking powder
Mix-ins and Toppings
  • 50 g 50 g (½ cup) walnuts, chopped Try using different nuts, such as pecans or hazelnuts, for varied textures.
  • 100 g 100 g (1 cup) chocolate chips (reserve some for topping)
  • 100 g 100 g (3.5 oz) dark chocolate Look for high-quality dark chocolate for melting; it makes a noticeable difference in taste.
  • 40 ml 40 ml (2 ½ tablespoons) boiling water or milk

Method

Preparation
  1. Preheat your oven to 180°C (350°F) and lightly grease the baking pan with oil or butter to prevent sticking.
  2. In a medium bowl, combine the oat flakes with the hot milk. Let it sit for about 10 minutes to soften.
  3. While the oats are soaking, prepare your bananas by mashing them in a separate bowl until smooth.
Mixing
  1. To the soaked oats, add the mashed bananas, eggs, vanillin, cocoa powder, and baking powder. Stir until the mixture is well combined.
  2. Gently fold in the chopped walnuts and chocolate chips, making sure they are evenly distributed.
Baking
  1. Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
  2. Bake for 15–20 minutes or until the edges are set and a toothpick inserted in the center comes out clean. Keep an eye on the timing, as overbaking can lead to a drier texture.
  3. While the dessert bakes, melt the dark chocolate with the boiling milk in a saucepan or microwave, stirring until smooth.
  4. Once the dessert is done, remove it from the oven and drizzle the melted chocolate over the top. Allow it to cool slightly before slicing into squares.

Notes

For a crispier top, consider broiling the dessert for the last 2 minutes of baking; just keep a close eye to avoid burning. Letting the dessert cool for about 5 minutes before cutting helps it hold its shape better. If the batter feels too thick, a splash of extra milk can help loosen it.
