Ingredients

Cake Batter
  • 2 large eggs
  • a pinch salt
  • 1 teaspoon vanilla extract (or 2 teaspoons vanilla sugar)
  • 80 g sugar
  • 100 ml milk
  • 100 ml sunflower oil
  • 200 g all-purpose flour
  • 7 g baking powder
Cheese Layer
  • 150 g fresh cheese or cream cheese Mascarpone or ricotta can be used as substitutes.
  • 1 tablespoon sugar (for the cheese layer)
  • 1 large egg (for the cheese layer)
Toppings
  • 150 g frozen berries (e.g., raspberries) Can use blueberries, strawberries, or mixed berries.
  • Icing sugar, for dusting

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the eggs with a pinch of salt, sugar, and vanilla. Stir well until the mixture is smooth and slightly frothy.
  3. Add the milk and sunflower oil to the egg mixture, continuing to mix until combined.
  4. Sift together the flour and baking powder, then gradually add it to the wet ingredients. Mix until smooth and no lumps remain.
  5. Pour half of the batter into a greased cake pan, spreading it evenly to create a smooth top.
  6. In another bowl, mix the fresh cheese with the sugar and one egg until well combined and creamy.
  7. Carefully pour the cheese mixture over the batter in the pan, spreading it gently.
  8. Distribute the frozen berries evenly on top of the cheese layer.
Baking
  1. Bake in the oven for about 35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  2. Allow it to cool slightly before dusting with icing sugar.

Notes

Make sure your ingredients are at room temperature for a smoother batter. Don’t skip the cooling time; the cake will slice better when slightly cooled. Try swapping the berries with chopped fruits or nuts for different flavors.
