Peanut Butter S’mores Sandwich Cookies 🍪🔥
Ingredients
For the Cookies
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
For the Filling
- 1 cup marshmallow fluff
- 1/2 cup chocolate spread or melted chocolate
- 4 graham crackers, crushed
Instructions
- Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a large bowl, beat together peanut butter, butter, brown sugar, and granulated sugar until creamy.
- Add egg and vanilla extract, mixing well.
- Stir in flour, baking soda, and salt until a soft dough forms.
- Roll dough into small balls and place on the baking tray. Flatten slightly with a fork.
- Bake for 10–12 minutes until lightly golden. Let cookies cool completely.
- Mix marshmallow fluff with crushed graham crackers.
- Spread chocolate on one cookie and marshmallow mixture on another.
- Sandwich the cookies together gently.
- Chill for 10 minutes before serving for the perfect gooey texture.
