Recipe 1: Savory Potato Patties
Ingredients
- 5 boiled potatoes (about 500 g), peeled
- 20 g (1.5 tablespoons) butter
- 1 teaspoon salt
- 1 egg
- 1 bunch fresh parsley, chopped
- 200-220 g (1.5-1.75 cups) all-purpose flour
- 1 teaspoon baking powder
- 30 ml (2 tablespoons) vegetable oil, plus more for frying
- 1 onion, finely chopped
- 1 red pepper, diced
- 50 g (about 1/3 cup) green onions, chopped
- 350 g (12 oz) minced meat (beef, pork, or your choice)
- 1 teaspoon tomato paste
- Salt and spices to taste
Instructions
- Start by mashing the boiled potatoes in a large bowl while they’re still warm. Add the butter, salt, egg, chopped parsley, flour, and baking powder. Mix until a soft dough forms.
- Wet your hands slightly, then shape the dough into small balls. Refrigerate them for about 20 minutes; this helps them hold their shape later.
- In a skillet over medium heat, add the vegetable oil. Sauté the chopped onions, red pepper, and green onions until they’re fragrant and the onions are translucent.
- Add the minced meat, breaking it apart with a spoon. Cook for about 5-7 minutes, or until the meat is browned. Stir in the tomato paste, salt, and spices. Cook for another couple of minutes. Remove from heat and set aside.
- Take the chilled potato balls and gently flatten each one in your palm. Place a spoonful of the meat mixture in the center, then fold the edges over and pinch to seal. Form them into neat patties.
- In the same skillet, heat a bit more vegetable oil over medium heat. Fry each potato patty for about 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels before serving.
Tips
- Ensure your mashed potatoes are smooth, with no lumps, for a better texture.
- When sealing the patties, make sure to pinch them well to avoid them opening during frying.
- Fry a test patty first to check the seasoning and adjust as needed.
