Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with a little olive oil.
  2. In your blender or food processor, combine the oats, spinach, water, olive oil, eggs, salt, and baking powder. Blend until you achieve a smooth, thick batter. Add optional herbs or spices if desired.
  3. Pour the mixture into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
  3. Slice and enjoy! This bread can be served warm or cold.

Notes
