Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly. Cut them in half or quarters if they are larger, ensuring pieces are similar in size for even cooking.
  3. In a large mixing bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and black pepper until they are well coated.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet. For best results, line the sheet with parchment paper to prevent sticking.
  2. Roast in the oven for about 30-35 minutes, flipping them halfway through. They should be golden brown and crispy when done.
  3. Remove from the oven and let them cool for a few minutes. Garnish with fresh herbs if desired before serving.

Notes

For extra crispiness, soak the cut potatoes in cold water for about 30 minutes before cooking. Don’t overcrowd the baking sheet to avoid steaming. Experiment with different seasonings like cumin or chili powder for added flavor.
