Creamy No-Bake Strawberry Tiramisu for Family Time

Preparation
- In a medium bowl, combine the sliced strawberries with a tablespoon of sugar (optional) and set aside to macerate for about 10 minutes.
- In another bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add in the powdered sugar and vanilla extract, then mix until stiff peaks form.
- Gently fold the mascarpone cheese into the whipped cream until well combined. Be careful not to deflate the whipped cream; it should remain light and airy.
Assembling
- Quickly dip each ladyfinger into the cooled coffee for just a second and layer them at the bottom of your baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, then add half of the macerated strawberry mixture on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberries.
Chilling and Serving
- Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or ideally overnight.
- Before serving, dust with cocoa powder if desired. Cut into squares and enjoy!
Notes
Over-soaking ladyfingers can lead to a soggy dessert. Store leftovers covered in the refrigerator for up to 2 days.
