Ingredients

For the Cream and Strawberries
  • 2 cups fresh strawberries, hulled and sliced Fresh strawberries are crucial for the best flavor.
  • 1 cup heavy cream Make sure it is cold for better peaks.
  • 1 cup mascarpone cheese Can substitute a mix of cream cheese and sour cream.
  • 1 cup powdered sugar Adjust to taste if you prefer a less sweet dessert.
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled Consider infusing with liqueur for extra flavor.
  • 24 pieces ladyfinger cookies (savoiardi) Sponge cake or savory biscuits can be used as alternatives.
  • Cocoa powder, for dusting (optional)

Method

Preparation
  1. In a medium bowl, combine the sliced strawberries with a tablespoon of sugar (optional) and set aside to macerate for about 10 minutes.
  2. In another bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add in the powdered sugar and vanilla extract, then mix until stiff peaks form.
  3. Gently fold the mascarpone cheese into the whipped cream until well combined. Be careful not to deflate the whipped cream; it should remain light and airy.
Assembling
  1. Quickly dip each ladyfinger into the cooled coffee for just a second and layer them at the bottom of your baking dish.
  2. Spread half of the mascarpone mixture over the ladyfingers, then add half of the macerated strawberry mixture on top.
  3. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberries.
Chilling and Serving
  1. Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or ideally overnight.
  2. Before serving, dust with cocoa powder if desired. Cut into squares and enjoy!

Notes

Over-soaking ladyfingers can lead to a soggy dessert. Store leftovers covered in the refrigerator for up to 2 days.
