Preparation
- In a large mixing bowl, combine the ground beef, eggs, salt, black pepper, paprika, and breadcrumbs. Mix until well combined.
- Form the beef mixture into small meatballs. Heat a splash of oil in a frying pan over medium heat and cook the meatballs until browned on all sides. Remove from the pan and set aside.
Cooking
- In the same pan, add a bit more oil if needed and sauté the chopped onion, carrot, and minced garlic until softened, about 5 minutes.
- Stir in the chopped fresh coriander and dill, followed by the sliced potatoes, spring onions, diced tomatoes, butter, sliced red onion, mushrooms, sour cream, mayonnaise, minced garlic, a little water, and flour. Mix well to combine.
- Cook this mixture, stirring occasionally, until the vegetables are tender, about 10-15 minutes.
- In a baking dish, layer the vegetable mixture and place the meatballs on top. Sprinkle with grated cheese.
- Preheat your oven to 180°C (350°F). Bake the casserole for about 25-30 minutes, or until the cheese is golden and bubbly.
- Remove from the oven, let it cool for a few minutes, then serve hot and enjoy!
Notes
For a crunchy topping, broil the casserole for an additional 2-3 minutes after baking. This recipe is perfect for meal prep; consider doubling it and freezing half for an easy future meal. Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, place the casserole in the oven at 180°C (350°F) for about 20 minutes until heated through.
