Healthy Madeleines: How to Bake Light and Tender Treats

Ingredients

Wet Ingredients
  • 3 large large eggs
  • 1 zest zest of 1 lemon (or your preferred flavoring) Feel free to experiment with flavorings.
  • 2 tablespoons sugar substitute (or any healthy sweetener)
  • 100 g melted butter Make sure that your butter is not too hot.
  • 125 g plain yogurt Any plain or flavored yogurt will work.
  • 90 ml milk
Dry Ingredients
  • 60 g dark cocoa powder This rich flavor adds to the madeleines.
  • 200 g whole wheat flour Substitute for gluten-free flour if needed.
  • 10 g baking powder

Method

Preparation
  1. In a mixing bowl, beat the eggs with the sugar substitute until the mixture doubles in volume, about 3-5 minutes with an electric mixer.
  2. Gently mix in the melted butter, yogurt, and milk until well combined and smooth.
  3. Gradually add the dark cocoa powder, stirring until fully integrated.
  4. Slowly fold in the whole wheat flour and baking powder until you have a smooth batter.
Baking
  1. Preheat your oven to 200°C (392°F) and prepare your madeleine molds by greasing or lining them with parchment paper.
  2. Evenly distribute the batter into each mold, filling them about three-quarters full.
  3. Bake for 15-20 minutes, or until risen and a toothpick inserted into the center comes out clean.
  4. Allow the madeleines to cool in the molds for about 5 minutes before transferring to a wire rack.

Notes

For best results, let the batter rest for at least 30 minutes in the fridge before baking. Store leftovers in an airtight container for up to three days or freeze for up to a month.
