Golden Zucchini Burger Without Frying Without Oven

- Grate the zucchinis into a large bowl and let them sit for a few minutes. Squeeze out excess liquid using a clean kitchen towel.
- Heat 2 tablespoons (30 ml) of olive oil in a skillet over medium-high heat. Add the minced garlic and chopped onion, sautéing until fragrant and slightly softened, about 3 minutes.
- In the bowl with grated zucchinis, add the sautéed garlic and onion, soaked bread cubes, grated cheese, parsley, egg, salt, and pepper. Mix well until combined.
- Gradually add breadcrumbs, stirring until the mixture reaches a thick, cohesive texture.
- Shape the mixture into patties about 3/4 inch (2 cm) thick.
Cooking
- Heat a tablespoon of olive oil in the same skillet over medium-high heat. Cook zucchini burgers for about 4–5 minutes on each side until golden brown and crispy.
- Transfer burgers to a paper towel-lined plate to absorb excess oil.
Notes
For added flavor, consider mixing in spices like smoked paprika or chili powder. If too moist, add more breadcrumbs. Keep an eye on the heat to avoid burning garlic.
