Easiest Flatbread Recipe

Ingredients

For the flatbread
  • 4 cups 4 cups (500 g) bread flour Preferred for higher protein content for chewier flatbread.
  • 1 teaspoon 1 teaspoon (5 g) instant dry yeast User-friendly, no proofing needed.
  • 1 tablespoon 1 tablespoon (15 g) sugar Aids in browning and adds flavor.
  • 1.5 cups 1 ½ cups (380 g) warm tap water Use slightly warmer water for better rise.
  • 1.5 teaspoons 1 ½ teaspoons (8 g) salt
  • 2 tablespoons 2 tablespoons (30 ml) olive oil Optional, can be replaced with melted butter.
  • Milk (for brushing)
  • Black cumin seeds (for topping, optional)
  • Sesame seeds (for topping, optional)

Method

Preparation
  1. In a large mixing bowl, whisk together the bread flour, instant dry yeast, sugar, and salt.
  2. Gradually pour in the warm water while mixing until a sticky dough forms.
  3. If using olive oil, add it to the mixture.
  4. Cover the bowl with a towel or plastic wrap and let the dough rest for 30-40 minutes.
  5. Perform stretch and fold movements on the dough for about 5 minutes until smooth.
  6. Cover and let the dough rise for about 30-45 minutes, until it doubles in size.
Baking
  1. Preheat the oven to 450°F (230°C) and place a bowl of boiling water inside to create steam.
  2. Prepare a baking tray with parchment paper and lightly dust with flour.
  3. Punch down the risen dough, divide into 4 pieces, and let rest for 5 minutes.
  4. Flatten each piece into a disc about ¼ inch thick using a rolling pin.
  5. Place on the tray, brush with milk, and create designs if desired.
  6. Sprinkle with black cumin seeds and sesame seeds if using.
  7. Bake for 17-20 minutes until golden brown.
  8. Allow to cool slightly on a wire rack and serve warm or at room temperature.

Notes

For extra flavor, consider adding herbs to the dough. Store leftover flatbread in an airtight container for up to 2 days.
