Preparation
- In a large mixing bowl, whisk together the bread flour, instant dry yeast, sugar, and salt.
- Gradually pour in the warm water while mixing until a sticky dough forms.
- If using olive oil, add it to the mixture.
- Cover the bowl with a towel or plastic wrap and let the dough rest for 30-40 minutes.
- Perform stretch and fold movements on the dough for about 5 minutes until smooth.
- Cover and let the dough rise for about 30-45 minutes, until it doubles in size.
Baking
- Preheat the oven to 450°F (230°C) and place a bowl of boiling water inside to create steam.
- Prepare a baking tray with parchment paper and lightly dust with flour.
- Punch down the risen dough, divide into 4 pieces, and let rest for 5 minutes.
- Flatten each piece into a disc about ¼ inch thick using a rolling pin.
- Place on the tray, brush with milk, and create designs if desired.
- Sprinkle with black cumin seeds and sesame seeds if using.
- Bake for 17-20 minutes until golden brown.
- Allow to cool slightly on a wire rack and serve warm or at room temperature.
Notes
For extra flavor, consider adding herbs to the dough. Store leftover flatbread in an airtight container for up to 2 days.
