A healthy and complete salad with potatoes, tuna and boiled eggs, dressed with lemon vinaigrette and olive oil.
Ingredients
- 4 boiled eggs
- 1/4 cup of olive oil
- Juice of 1 lemon
- 500g of potatoes, cut
- 2 cans of tuna
- 1/2 cup of olives
- 1 teaspoon of mustard (optional)
- 1 clove of chopped garlic
- 1/2 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook the potatoes with salt until tender, drain and cool.
- Boil the eggs for 10 minutes, peel them and cut them.
- Prepare the vinaigrette by mixing oil, lemon, garlic, mustard, salt and pepper.
- Mix potatoes, tuna and olives, add the vinaigrette.
- Decorate with the eggs and sprinkle with parsley.
Notes
- The potatoes should be cold when mixing.
- The vinaigrette can be prepared in advance.
- Ideal for refrigerating before serving.
