Lemon Mousse Dessert

Ingredients

For the Lemon Mixture
  • 4 medium medium lemons (about 1 cup / 240 ml lemon juice) Fresh lemon juice is recommended for the best flavor.
  • 100 g granulated sugar Adjust sweetness if desired.
  • 150 ml water
  • 40 g cornstarch
  • 2 zest Zest of 2 lemons Use a microplane for ultra-fine zest.
For the Cream Mixture
  • 500 ml heavy cream Can substitute with coconut cream for dairy-free.
  • 150 ml sweetened condensed milk Dairy-free alternatives can be used.

Method

Preparation
  1. In a medium saucepan, combine the juice from the lemons, sugar, water, cornstarch, and lemon zest. Stir well to dissolve the sugar and cornstarch completely.
  2. Place the saucepan over medium heat. Continuously stir the mixture until it thickens, about 5–7 minutes. Avoid boiling.
  3. Remove from heat and allow the lemon mixture to cool to room temperature.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, about 3–5 minutes.
  5. Gently fold in the condensed milk into the whipped cream until just incorporated.
  6. Gradually add the cooled lemon mixture, folding gently to maintain airiness.
  7. Spoon the mousse into individual serving glasses or bowls. Cover and chill in the refrigerator for at least 2 hours or overnight.

Notes

Letting the mousse chill overnight enhances the flavors. Serve garnished with mint, berries, or powdered sugar.
