Ingredients

Vegetables and Aromatics
  • 4 medium medium tomatoes, diced Fresh tomatoes will add the best flavor.
  • 1.5 L chicken broth (or vegetable broth) Use vegetable broth for a vegetarian version.
  • 400 g canned white beans, rinsed and drained Any variety of white beans like cannellini or navy beans can be used.
  • 150 g fresh green peas Frozen green peas can also be used.
  • 1 medium onion, finely chopped
  • 3 medium carrots, peeled and sliced
  • 1 medium bell pepper, diced
  • 2 stalks celery, chopped
  • 1 small chili pepper, diced Adjust based on your spice preference.
  • 3 cloves garlic, minced
Seasonings and Garnishes
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt to taste salt
  • Mixed to taste peppercorns
  • 4 slices bread (preferably sourdough or whole grain), for serving
  • 10 g fresh parsley, chopped Plus more for garnish.
  • 1 Juice of lemon About 120 g.

Method

Preparation
  1. Heat a splash of vegetable oil and a tablespoon of butter in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, diced chili pepper, chopped celery, sliced carrots, diced bell pepper, and the diced tomatoes.
  3. Season with salt, black pepper, and smoked paprika. Sauté the vegetables for about 10 minutes until they are softened and fragrant.
Cooking
  1. Pour in the chicken broth and bring the mixture to a gentle boil.
  2. Afterward, stir in the white beans and let the soup simmer for 30 minutes until all vegetables are tender.
  3. Add the green peas and some lemon juice; let it cook for an additional 10 minutes to allow the flavors to meld together.
  4. For an extra pop of flavor, stir in a tablespoon of butter, the garlic powder, chopped parsley, and more lemon juice. Adjust seasoning as needed.
Serving
  1. Serve hot, topping with additional parsley for garnish and alongside toasted bread slices for dipping.

Notes

To enhance the soup’s richness, sauté the vegetables until they reach a golden color before adding the broth. Always taste and adjust seasonings as you cook; a little more acidity from lemon can brighten the dish beautifully. Letting the soup sit for a few minutes after cooking allows the flavors to improve.
