Homemade Garlic and Onion Sauce

Preparation of Garlic Sauce
- Peel the garlic cloves, smashing them slightly for easier peeling.
- In a medium saucepan, combine the garlic cloves with sunflower oil and add the sprig of rosemary. Simmer over low heat for about 15-20 minutes until the garlic is golden brown and soft.
- Remove from heat and let the garlic cool completely.
- In a large mixing bowl, combine the cooled garlic and oil mixture, along with the eggs, mustard, salt, a squeeze of lemon juice, and black pepper.
- Blend the mixture using an immersion blender until thick and creamy, adjusting with more oil if needed.
- Taste and adjust the seasoning accordingly.
Preparation of Caramelized Onion Sauce
- Heat the sunflower oil in a large skillet over medium heat. Add the chopped onion.
- Cook the onions for about 20-30 minutes, stirring frequently, until they are deep golden brown and caramelized.
- Remove from heat, let cool a bit before blending with salt, pepper, and lemon juice.
- Blend until smooth or leave slightly chunky for texture.
- Taste and adjust the seasoning as necessary.
Combine the Sauces
- Prepare both the garlic and caramelized onion sauces separately.
- In a large mixing bowl, combine the roasted garlic and caramelized onion.
- Add the eggs, mustard, salt, pepper, and a generous squeeze of lemon juice.
- Blend with an immersion blender until smooth and emulsified. Adjust seasoning to taste.

Serve these sauces alongside grilled meats, roasted vegetables, or as an irresistible dip for bread. They can also be used as a base for dressings or marinades. Store these sauces in an airtight container in the refrigerator for up to a week. If the texture thickens, whisk in a small amount of water or olive oil before serving.
