Recipe Ingredients:

  • 3 large eggs
  • ¼ cup + 1 tablespoon granulated sugar (60 g / ~2.1 oz)
  • 2½ cups all-purpose flour (300 g / ~10.6 oz)
  • 1½ cups milk (350 ml / ~11.8 fl oz)
  • 1 teaspoon baking powder
  • ½ teaspoon salt (about 3 g)
  • 1 teaspoon vanilla extract (5 ml / ~0.17 fl oz)
  • Butter or oil for cooking

Instructions:

First, sift the flour, sugar, baking powder, and salt into a large mixing bowl. This step not only combines the dry ingredients, but also aerates the flour, helping to create light and fluffy pancakes.

Next, in a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until the mixture becomes smooth and well blended.

Then, pour the wet mixture into the bowl with the dry ingredients. Gently stir until the batter comes together. Be careful not to overmix, as this can develop too much gluten and result in dense pancakes.

After that, preheat a griddle or frying pan over medium heat and lightly grease the surface with oil or butter. A well-heated griddle is essential for achieving a golden brown exterior.

Once heated, ladle about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles begin appearing on the surface and the edges look set. Carefully flip and continue cooking until the second side is golden brown.

Finally, serve the pancakes immediately with your favorite toppings. Classic maple syrup, fresh fruit, or a scoop of whipped cream are great choices to elevate your homemade pancakes.

Tips

• Batter Consistency: If the batter feels too thick and doesn’t spread easily, add a small amount of milk until it reaches a pourable consistency.
• Keeping Pancakes Warm: When cooking multiple batches, place finished pancakes in a low oven to keep them warm without drying them out.
• Add-Ins: Once you feel comfortable with the basic recipe, try mixing in chocolate chips, blueberries, or thin slices of banana before cooking for an extra touch of flavor.
