Preparation
- Soak the pitted dates in a bowl with hot water for about 8 minutes until soft.
- Transfer the soaked dates along with the soaking water to a food processor or blender and blend until smooth.
- In a separate mixing bowl, beat the two eggs with a hand mixer or whisk until fluffy and light in color, about 3-4 minutes.
- Gently fold the date puree into the whipped eggs in two parts, mixing until just combined. Then fold in the sesame seeds.
- Grease an 8-inch round baking pan and line the bottom with parchment paper.
Cooking
- Pour the batter into the prepared pan. Cover with a lid or aluminum foil.
- Place the pan over a griddle or skillet with a bit of water to create steam. Cook on low heat for about 20 minutes or until a toothpick comes out clean.
Finishing
- Let the cake sit covered for 5 minutes, then run a knife around the edges and unmold onto a wire rack to cool completely.
Notes
Use fresh dates for the best flavor, and ensure to blend them thoroughly to avoid lumps. You can add nuts, spices, or fruit flavorings to customize the cake. Serve it plain, or with yogurt or fruit for a delightful snack.
