A healthy and easy-to-prepare cake with oats, apple and carrot, ideal for breakfasts, snacks or light desserts.


Ingredients

  • 2 large eggs
  • 2 medium apples, finely grated
  • 2 medium carrots, finely grated
  • 1 cup of rolled oats
  • ½ cup of muscovado sugar
  • 1 tablespoon of baking powder
  • Cinnamon to taste

Instructions

  1. Preheat the oven to 180°C.
  2. Grate the apples and carrots using a fine grater.
  3. Mix the eggs with the muscovado sugar in a large bowl.
  4. Add the grated fruit and mix well.
  5. Add the oats, cinnamon, and baking powder.
  6. Pour the mixture into a greased mold.
  7. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  8. Let it cool before unmolding and serving.

Notes

  • You can substitute sugar with honey, ripe banana, or dates.
  • For a gluten-free version, use certified gluten-free oats.
  • Add nuts, raisins, or shredded coconut for added flavor and texture.
  • Serve cold or slightly warm with natural yogurt.
