Ingredients
- 2Â large eggs
- 2Â medium apples, finely grated
- 2Â medium carrots, finely grated
- 1Â cup of rolled oats
- ½ cup of muscovado sugar
- 1Â tablespoon of baking powder
- Cinnamon to taste
Instructions
- Preheat the oven to 180°C.
- Grate the apples and carrots using a fine grater.
- Mix the eggs with the muscovado sugar in a large bowl.
- Add the grated fruit and mix well.
- Add the oats, cinnamon, and baking powder.
- Pour the mixture into a greased mold.
- Bake for 30 to 35 minutes or until a toothpick comes out clean.
- Let it cool before unmolding and serving.
Notes
- You can substitute sugar with honey, ripe banana, or dates.
- For a gluten-free version, use certified gluten-free oats.
- Add nuts, raisins, or shredded coconut for added flavor and texture.
- Serve cold or slightly warm with natural yogurt.
