Preparation
- In a medium mixing bowl, combine the cottage cheese, egg, and a pinch of salt. Mix until well blended, ensuring no large curds remain.
- Gradually incorporate the flour, mixing well until a non-sticky dough forms.
- Cover the bowl with a kitchen towel and let the dough rest for about 5 minutes.
- Prepare a plate dusted lightly with flour.
- With floured hands, scoop the curd mixture into 1.5-inch balls and place them on the plate.
Cooking
- Fill a large pot with water and add a pinch of salt. Bring it to a boil.
- Once boiling, gently drop the curd balls into the water. Cook until they float, about 2 minutes.
- Using a slotted spoon, remove the cooked clouds and allow excess water to drain.
- Melt remaining butter in a large bowl and toss the clouds to coat evenly.
- Serve with a generous dollop of sour cream.
Notes
For sweet clouds, add chocolate chips before rolling. For savory clouds, incorporate herbs. Store leftovers in an airtight container for up to 3 days. Reheat by steaming or microwaving.
