Ingredients

Main Ingredients
  • 2 ½ cups cottage cheese High protein content
  • 1 large egg
  • 1 pinch salt
  • 3 tablespoons all-purpose flour Adjust if needed
  • 3 ½ tablespoons butter For tossing the clouds

  • Sour cream For dipping

  • ½ cup mini chocolate chips Add for a sweet version

  • ¼ cup freshly chopped herbs E.g., parsley, dill, or chives

Method

Preparation
  1. In a medium mixing bowl, combine the cottage cheese, egg, and a pinch of salt. Mix until well blended, ensuring no large curds remain.
  2. Gradually incorporate the flour, mixing well until a non-sticky dough forms.
  3. Cover the bowl with a kitchen towel and let the dough rest for about 5 minutes.
  4. Prepare a plate dusted lightly with flour.
  5. With floured hands, scoop the curd mixture into 1.5-inch balls and place them on the plate.
Cooking
  1. Fill a large pot with water and add a pinch of salt. Bring it to a boil.
  2. Once boiling, gently drop the curd balls into the water. Cook until they float, about 2 minutes.
  3. Using a slotted spoon, remove the cooked clouds and allow excess water to drain.
  4. Melt remaining butter in a large bowl and toss the clouds to coat evenly.
  5. Serve with a generous dollop of sour cream.

Notes

For sweet clouds, add chocolate chips before rolling. For savory clouds, incorporate herbs. Store leftovers in an airtight container for up to 3 days. Reheat by steaming or microwaving.
