Melt-in-your-mouth Spinach Snack

Ingredients

Main ingredients
  • 400 g 400g frozen or fresh spinach Use fresh spinach for vibrant flavor; frozen works well if thawed and drained.
  • 1 whole 1 onion, chopped
  • 1 whole 1 red bell pepper, diced
  • Salt and pepper To taste
  • 5 large 5 large eggs
  • 150 g 150g plain Greek yogurt
  • 60 g 60g white cheddar cheese or grated parmesan Feel free to experiment with different cheeses.
  • Chili pepper (optional) Add for heat if desired.
  • Olive oil For cooking

Method

Preparation
  1. Heat a splash of olive oil in a pan over medium heat.
  2. Add 400g of spinach (frozen or fresh) to the pan.
  3. Cover and cook for 7-8 minutes, until the spinach is wilted.
  4. Season with salt and pepper while cooking. Make sure to let all the water evaporate, then set aside to cool.
  5. In another pan, heat some olive oil and sauté the chopped onion and diced red bell pepper.
  6. Season with salt and pepper as you cook.
  7. In a bowl, whisk together 5 large eggs and mix in 150g of plain Greek yogurt. Season with salt and pepper, adding chili pepper if you like a bit of heat.
  8. Carefully fold in the cooked spinach, onion, and bell pepper into the egg mixture.
  9. Pour this mixture into a baking dish.
  10. Sprinkle 60g of white cheddar cheese or grated parmesan over the top.
Cooking
  1. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, until the top is golden and the eggs are set.
  2. Serve this delightful spinach snack hot and enjoy!

Notes

For meal prep, this dish keeps well in the fridge for a few days and can be reheated easily. Experiment with different cheeses or add herbs like dill or basil for extra flavor.
