Slow Cooker Honey Garlic Pork Chops

Ingredients

  • 4 boneless pork chops about 1 inch thick
  • Salt & black pepper to taste
  • 1 tbsp olive oil optional, for searing

Honey Garlic Sauce

  • ½ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic minced
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp dried thyme or 1 tbsp fresh
  • ½ tsp red pepper flakes optional

Thickening Slurry (Optional)

  • 1 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  • Season the Pork
  • Pat pork chops dry and season both sides with salt and pepper.
  • Optional Sear (Recommended)
  • Heat olive oil in a skillet over medium-high heat.
  • Sear pork chops for 2–3 minutes per side until lightly golden.
  • (This adds extra flavor but can be skipped if short on time.)
  • Make the Sauce
  • In a bowl, whisk together:
  • Honey
  • Soy sauce
  • Garlic
  • Ketchup
  • Apple cider vinegar
  • Thyme
  • Red pepper flakes (if using)
  • Slow Cook
  • Place pork chops in the slow cooker.
  • Pour the honey garlic sauce over the top.
  • Cook:
  • LOW for 4–5 hours, or
  • HIGH for 2–3 hours,
  • until pork is tender and reaches 145°F (63°C) internally.
  • Thicken the Sauce (Optional)
  • If you prefer a thicker glaze:
  • Mix cornstarch and cold water.
  • Stir into the slow cooker during the last 20–30 minutes.
  • Let cook until sauce thickens.
  • Serve
  • Spoon extra sauce over the pork before serving.
  • Garnish with chopped parsley or green onions if desired.
