Stuffed potatoes with meat are a traditional Latin American dish, crispy on the outside and with a juicy, well-seasoned filling. Perfect for any occasion, these delicious potato fritters combine the smoothness of mashed potatoes with the spiced flavor of meat.
Ingredients
- 4Â large potatoes
- 250g of ground beef
- ½ chopped onion
- 1Â clove of chopped garlic
- ½ chopped red bell pepper
- 1Â teaspoon of cumin
- 1Â teaspoon of sweet paprika
- Salt and pepper to taste
- 1Â tablespoon of chopped parsley
- 1Â egg
- ½ cup of wheat flour
- 1Â cup of breadcrumbs
- Frying oil
Instructions
- Cook the potatoes in salted water until soft (20 min), then peel them and make a smooth puree.
- In a frying pan, sauté the onion, garlic, and red pepper until tender.
- Add the ground beef, season with salt, pepper, cumin, and paprika. Cook for 5 more minutes and add the parsley. Let cool.
- Take a portion of mashed potato, flatten it, place a spoonful of the filling in the center and close it forming a ball.
- Coat each ball by dipping it in flour, beaten egg, and breadcrumbs.
- Fry in hot oil until golden brown and crispy. Place on absorbent paper.
- Serve hot with sauce or salad.
Notes
- To prevent stuffed potatoes from opening when frying, make sure to seal them well and refrigerate them before frying.
- You can make a healthier version by baking them at 200°C for 25 minutes.
