Baked Cod with Prawn Sauté is a simple and delicious Mediterranean recipe, ideal for special dinners and family meals.
Ingredients
- 2 small potatoes
- 4 cloves of garlic
- 1 chili pepper (optional)
- Fresh chopped parsley
- 2 cod fillets, salted to perfection
- 175g of peeled prawns
- Extra virgin olive oil
- Salt to taste
Instructions
- Preheat the oven to 200°C.
- Peel, wash and slice the potatoes thinly.
- Place the potato slices in an ovenproof dish, add olive oil, salt and bake for 20 minutes.
- Place the cod fillets on top of the potatoes, skin side down, and bake for 10-15 minutes.
- Meanwhile, heat oil in a frying pan, brown the sliced garlic along with the chili pepper.
- Add the peeled prawns, cook for 2-3 minutes and sprinkle with fresh parsley.
- Serve the cod on top of the potatoes and pour the shrimp sauté over it.
Notes
- Use good quality cod for best results.
- Don’t let the garlic burn to avoid a bitter taste.
- You can substitute the prawns with small shrimp or squid.
- Adjust the amount of chili pepper according to your taste for spiciness.
