Ingredients

  • 1 lb 450g smoked sausage, sliced into ½-inch pieces
  • 1 lb 450g baby potatoes, halved or quartered if large
  • 1 small onion chopped
  • 1 bell pepper any color, chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)

Instructions

  • Prep the Potatoes
  • Wash and halve the potatoes. If large, quarter them for even cooking.
  • Optional: parboil potatoes for 5 minutes to reduce skillet cooking time.
  • Cook the Sausage
  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add sliced smoked sausage and cook until browned (about 4–5 minutes).
  • Remove sausage from skillet and set aside.
  • Sauté the Veggies
  • Add remaining 1 tbsp olive oil to the skillet.
  • Sauté onion and bell pepper for 3–4 minutes until softened.
  • Stir in garlic, smoked paprika, and thyme; cook 1 minute more.
  • Cook the Potatoes
  • Add potatoes to the skillet and toss to coat with oil and spices.
  • Cover and cook over medium heat 15–20 minutes, stirring occasionally, until potatoes are tender.
  • Season with salt and pepper.
  • Combine and Finish
  • Return the browned sausage to the skillet.
  • Stir gently and cook 2–3 more minutes until heated through.
  • Garnish and Serve
  • Sprinkle fresh parsley over the top before serving.
  • Serve warm as a hearty breakfast, lunch, or dinner.
