Ingredients
- 1 lb 450g smoked sausage, sliced into ½-inch pieces
- 1 lb 450g baby potatoes, halved or quartered if large
- 1 small onion chopped
- 1 bell pepper any color, chopped
- 2 cloves garlic minced
- 2 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp dried thyme
- Salt and pepper to taste
- 2 tbsp fresh parsley chopped (for garnish)

Prep the Potatoes

Wash and halve the potatoes. If large, quarter them for even cooking.

Optional: parboil potatoes for 5 minutes to reduce skillet cooking time.

Cook the Sausage

Heat 1 tbsp olive oil in a large skillet over medium heat.

Add sliced smoked sausage and cook until browned (about 4–5 minutes).

Remove sausage from skillet and set aside.

Sauté the Veggies

Add remaining 1 tbsp olive oil to the skillet.

Sauté onion and bell pepper for 3–4 minutes until softened.

Stir in garlic, smoked paprika, and thyme; cook 1 minute more.

Cook the Potatoes

Add potatoes to the skillet and toss to coat with oil and spices.

Cover and cook over medium heat 15–20 minutes, stirring occasionally, until potatoes are tender.
