Ingredients

  For the Avocado Bread

  • 1 avocado Make sure it’s ripe for best flavor.
  • 1 egg
  • 50 grams hard cheese
  • 50 grams tuna
  • A few slices cucumber For added freshness.
  • A little spinach
  • Salt To taste.
  • Pepper To taste.
  • Oil For drizzling.
  • 4 tablespoons flour Can substitute with gluten-free blend if needed.

  • 1 tablespoon baking powder

  • 1 egg For filling.
  • 100 grams tuna For filling.
  • Green onions For filling.
  • 2 tablespoons yogurt or sour cream For filling.
For Topping
  • 1 boiled egg
  • 1/2 carrot
  • 50 grams processed cheese

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, mash the avocado well.
  3. Add the egg, grated hard cheese, tuna, cucumber slices, spinach, salt, and pepper. Mix until combined.
  4. Pour the avocado mixture into a baking dish and drizzle with oil. Bake for 20 minutes.
  5. For the bonus recipe, mash the avocado again in a separate bowl.
  6. Mix in the eggs, flour, parsley, baking powder, and flax until well combined.
  7. Pour this mixture into another baking dish and drizzle with oil. Bake for 25-30 minutes.
  8. Prepare the fillings by mixing the specified ingredients for the filling variations.
  9. Once both breads are baked, top each one with their respective fillings and any additional toppings as desired.

Notes

Make sure to store any leftovers in an airtight container in the fridge, they should stay fresh for a couple of days. Consider freezing extra after baking. A sprinkle of your favorite herbs can elevate the flavors even more.
