Dietary Cottage Cheese Cake Without Flour and Sugar

  • 200 g cottage cheese Make sure it is well-drained.
  • 4 tbsp oat bran Ensure it’s gluten-free if required.
  • 2 tbsp cocoa powder Sifted.
  • 2 tsp stevia Adjust to taste for sweetness.
  • 2 pieces chicken eggs Use 1 egg white or 2 egg whites if they’re small for the filling.
  • 1 scoop protein powder (optional) Use as desired.
  • Butter (for greasing) Use as needed to grease the baking dish.

Method

Preparation
  1. Preheat your oven to 180 degrees Celsius.
  2. In a bowl, combine cottage cheese, oat bran, and sift in cocoa powder. Mix until the mixture resembles crumbs.
  3. Grease a baking dish with butter and spread half of the crumb mixture evenly in the dish.
Filling and Baking
  1. For the filling, mix together another portion of cottage cheese, stevia, and whole eggs, adding in 1 egg white or 2 egg whites if they’re on the smaller side.
  2. Pour the filling over the crumb mixture in the baking dish.
  3. Bake in the preheated oven for 40-45 minutes, or until the cake is set.
  4. Allow the cake to cool completely in the dish before removing it from the mold. Optionally, drizzle it with syrup or sprinkle with erythritol powder just before serving.

Notes

Let the cake sit in the fridge for a few hours before serving for a richer flavor. Store leftovers in an airtight container in the fridge for up to three days. Experiment with different toppings like nuts or sugar-free chocolate chips.
