Ingredients

  • 2 cloves of chopped garlic
  • Juice of ½ lemon
  • Salt and pepper to taste
  • 3 tablespoons of olive oil
  • 2 salmon fillets ( 150-200g each )

  2. Place the potatoes on a baking tray, add 1 tablespoon of oil, salt, pepper, and dried herbs. Bake for 15 minutes.

  4. Season the salmon fillets with salt, pepper, lemon juice and a drizzle of olive oil.
  5. Remove the tray from the oven, move the potatoes and place the salmon fillets and asparagus on top.
  6. Bake everything together for 15–20 minutes, until the salmon is juicy and the potatoes are golden brown.
  7. Serve hot with a few extra drops of lemon if desired.

Notes

  • You can use fresh or thawed salmon, making sure to dry it well.
  • Asparagus can be substituted with broccoli, zucchini, or carrots.
  • Sweet potatoes are an excellent alternative to traditional potatoes.
  • Keep an eye on the salmon so it doesn’t dry out.
