A simple and healthy recipe for no-fried croquettes, with fresh vegetables, oats and cheese, perfect for any occasion.
Ingredients
- 1Â large zucchini, grated
- 1Â medium carrot, grated
- 1Â medium potato, grated
- 4Â tablespoons of oats
- 100g of grated cheese
- 2Â whole eggs
- Salt to taste
- Pepper, garlic powder, oregano, cumin, turmeric (optional)
Instructions
- Grate the vegetables and drain the excess water using a clean cloth.
- In a large bowl, mix the drained vegetables with eggs, oats, cheese, and seasonings.
- Shape the croquettes with slightly moistened hands.
- Cook them in the oven at 200°C for 20-25 minutes, in an air fryer at 180°C for 15-18 minutes, or in a pan with a little oil until golden brown.
Notes
- You can use vegan cheese and egg substitute for a vegan version.
- Freeze the formed croquettes so they are ready at any time.
- For extra crispiness, coat with wholemeal breadcrumbs before cooking.
