Healthy croquettes without frying

A simple and healthy recipe for no-fried croquettes, with fresh vegetables, oats and cheese, perfect for any occasion.


Ingredients

  • 1 large zucchini, grated
  • 1 medium carrot, grated
  • 1 medium potato, grated
  • 4 tablespoons of oats
  • 100g of grated cheese
  • 2 whole eggs
  • Salt to taste
  • Pepper, garlic powder, oregano, cumin, turmeric (optional)

 


Instructions

  1. Grate the vegetables and drain the excess water using a clean cloth.
  2. In a large bowl, mix the drained vegetables with eggs, oats, cheese, and seasonings.
  3. Shape the croquettes with slightly moistened hands.
  4. Cook them in the oven at 200°C for 20-25 minutes, in an air fryer at 180°C for 15-18 minutes, or in a pan with a little oil until golden brown.

Notes

  • You can use vegan cheese and egg substitute for a vegan version.
  • Freeze the formed croquettes so they are ready at any time.
  • For extra crispiness, coat with wholemeal breadcrumbs before cooking.
